Cream Cheese Chicken Soup

1 small onion, chopped (use less if you'd like)
1 T. Smart Balance Light spread
3 c. organic chicken broth
3 medium carrots, cut into 1/4 in. slices
2 medium potatoes, peeled and cubed
2 c. cubed boneless skinless chicken
2 T. minced fresh parsley
salt and pepper to taste
1/4 c. unbleached flour
1/4 c. soy milk
8 oz. Tofutti Better Than Cream Cheese
1/2 c. Tofutti Better Than Sour Cream
white sugar to taste
In large saucepan, saute the onion in butter. Add broth, carrots & potatoes. Bring to a boil. Reduce heat, cover & simmer 15 min. or till veg. are tender. Add the chicken, parsley, salt & pepper; heat through. Whisk together flour and soy milk until smooth; add to veg. mixture. Bring to a boil; cook & stir for 2 minutes or till thickened. Reduce heat. Add the Tofutti cream cheese and sour cream. I like to sprinkle sugar on top of my soup before I eat it. I think that makes the cream cheese flavor taste more like real cream cheese. I know that sounds wierd but try it! This is one of my favorite recipes.. ENJOY!!
