As for the Italian dressing, you can try the herb mix from my Sicilian Chicken instead - leave out the crushed red pepper if you think it will bother you and you can cut down or omit the garlic also. That leaves you with basil, salt, and pepper - I'd think basil would be safe. I don't know why you can't do canned tomatoes although sometimes stuff is canned with citric acid and maybe that's too acid-y for you?
