I absolutely love Crockpot Bourbon Breast of Chicken. It calls for canned tomatoes but I would think you could use fresh with no problem. It's delicious and the whole house smells wonderful when it's cooking. If you don't usually keep bourbon around you can buy one of those little airplane-size bottles at the liquor store to try the recipe. If you love the recipe as much as I do, you'll soon be investing in the 1.5 liter bottle so you can make it often.

You might also take a look at Kree's Italian Chicken and Potatoes. I've never made this but I love my Sicilian Chicken and I would think you could either cook that as Kree's recipe suggests or perhaps do a combo of the two recipes or even make mine in the crockpot and leave out the tomatoes.

And, of course, there are a bunch of crockpot recipes in the Recipe Index - they're listed all over the place and they all start with "Slow Cooker".
