Salsa recipe.

This is the recipe from the book.I omit a few things and you could too I'm sure.It might work out it might not but you should try.

10 cups chopped tomatoes,peeled (pour boiling water over them to peel easier.I used yellow tomatoes too for colour)
1 1/2 cups chopped onion
1 1/2 cups chopped green peppers
1 1/2 cups chopped red peppers (i used half red and half yellow)
4 chopped hot chili peppers
4 chopped banana peppers ( I left both of these out)

5 cloves garlic (I used two)
13 oz can tomato paste
1 cup white vinegar
4 tbsp white sugar
3 tsp pickling salt
2 tsp paprika
juice from 1 lime(I just used some from the jar)

4 tbsp dried parsley
2 tsp oregano
These are added near the end of cooking

Combine all ingredients Bring to a boil. Simmer until desired consistancy.(about 1 1/2 hours)
add parsley and oregano near the end.
Fill sterilized jars and seal.
I got 6 500ml jars. If you cut down on the peppers it would be a bit smaller.
I used field tomatos and home grown too.I have to say it was my best batch ever!
