Lemon Zucchini Muffins

I'm hoping to try this one soon as I have a gargantuan zucchini taking up space in my kitchen!

LEMON ZUCCHINI MUFFINS

2 cups (500 mL) flour
1/2 cup (125 mL) sugar
1 tbsp (15 mL) baking powder
1/2 tsp (2 mL) ginger
1/4 tsp (1 mL) nutmeg
1/4 tsp (1 mL) salt

3/4 cup (175 mL) soy milk
1/4 cup (50 mL) canola oil
2 egg whites or 1/4 cup egg sub
1 tsp (5 mL) vanilla
1 cup (250 mL) shredded zucchini
2 tsp (10 mL) grated lemon peel

Combine first 6 ingredients (flour through salt) in a bowl. Whisk together milk, oil, egg and vanilla until well blended.

Stir in zucchini and lemon peel. Add to flour mixture and stir just until blended. Spoon batter into paper-lined muffin cups, filling cups three-quarters full. Bake at 400ºF (200ºC) for 20 - 25 minutes or until muffins test done. Cool muffins in pan for 5 minutes. Remove from pan and cool on a rack. Makes 10 - 12.
