Irritable Bowel Syndrome Message Boards

I tried this with Ranch dressing and it was yummy but then I decided to start playing around with other seasonings and found a lot of recipes attempting to duplicate the flavor of Kentucky Fried Chicken. The one that looked best was on KFC Forum so I used his seasonings:

1. 3 tsp Black Pepper
2. 1/2 tsp Paprika (Sweet)
3. 1/2 tsp Garlic
4. 1/4 tsp Cayenne
5. 1/4 tsp Sage
6. 1/4 tsp Onion
7. 1/4 tsp Caraway
8. 1/4 tsp Allspice
9. 1/8 tsp Tarragon
10. 1/8 tsp Marjoram
11. 1/8 tsp Rosemary

Plus:

4.5 tsp Salt

(He also used 1/4 teaspoon of sugar which I forgot to add).

I mixed all these ingredients together then made my own "dressing" by combining 1/3 cup of reduced fat mayo with rice milk - start with 1/8 cup rice milk and whisk together. If it's too thick, add a little more rice milk. Then whisk in 1/2 Tablespoon of the KFC flavoring mix.

I also added 1/2 Tablespoon of the KFC flavoring mix to the potato mix. (I used a cup to a cup and a half of Betty Crocker Potato Buds.)

I also dredged the chicken in about 1/2 cup of flour mixed with 1/2 Tablespoon of the KFC flavoring mix before dipping in the "dressing". So the chicken went into flour, then dressing, then potato buds. (I made 2 pretty large breasts with these quantities.)

This was very good. It didn't taste just like KFC, of course, but the flavorings were yummy. Next time I think I'll spray the chicken with a little Pam before popping it in the oven in order to get more browning on the potato buds.
