Hi this is my favorite blueberry muffin you can actuley change the fruit in this and it will work with what ever fruit you have.
Very Simple Blueberry Muffins
1 1/2 cups flour
1/2 cup sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup almond, soy, rice milk (i use almond)
1/4 cup canola oil
1 cup frozen blueberries
preheat oven to 400 place spray muffin pan with cooking spray.
Combine flour, sugar, salt, and baking powder, togther in a mixing bowl. Add milk of choice and oil mix.
Fold in blueberries (if using frozen do not thaw first)
pour into baking cups and bake 25-30 mints.
Makes 8 muffins

Blueberry sauce over coffee cake
Blueberry Sauce
1/2 cup sugar
2 cups blueberries
2 Tbsp. cornstarch
1/2 tsp. lemon juice
1/2 cup water Combine sugar and cornstarch in a medium saucepan. Add water and blueberries. Heat on medium stirring continuously until thickened and bubbly. Remove from heat and add lemon juice.

Cinnamon Coffee Cake Loaf
2 cups all-purpose flour
1 1/4 cups sugar, divided
3 tsp baking powder
3 1/2 tsp ground cinnamon, divided
1 1/4 tsp salt
1/2 cup egg beaters (or 4 egg whites)
1 cup soy or rice milk
1 Tbsp cider vinegar
1/3 cup canola oil
2 tsp vanilla extract
3 Tbsp soy butter, melted
In a small bowl, whisk together the soy/rice milk and cider vinegar; set aside. In another bowl, combine the flour, 1 cup sugar, baking powder, 1 1/2 tsp cinnamon and salt. In another bowl, combine egg beaters (or egg whites), soy/rice milk mixture, oil and vanilla; stir into dry ingredients just until smooth. Pour half of the batter into a 9x5x3 loaf pan sprayed with cooking spray. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Drizzle half over batter; cut through with a knife to swirl. Top with remaining batter. Drizzle with remaining cinnamon-sugar mixture; swirl with a knife. Bake at 350 for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Blueberry Slump
I found this in a old taste of home cookbook
3 cups fresh or frozen blueberries
1-1/4 cups of water
1/2 cup odf sugar
1 tablespoon of lemon juice
1teaspoon finley grated lemon peel ( i left out)
1 cup of flour
2T of sugar
2t of baking powder
1/2 teaspoon salt
1 table spoon of butter (safe)
1/2 cup of milk of choice
In a large sauce pan comine blue berries water suagr lemon juice and peel;bring to a boil. Reduce heat and simmer uncovered for 5 minutes. Meanwhile, combine flour sugar baking powder and salt;cut in butter until mixtures resembles coarse crumbs. Add cold milk,mixing just until moistened. Drop six spoonfuls onto the simmering berries.Cover and cook on low heat for 10 mins. DO NOT LIFT LID! Spoon dumplings into serving bowels and spoon sauce over each one.

blueberry cobbler (look for kress fruit cobbler and mix peaches and blueberries) YUM!
Blueberry and peach smoothie.
