Can I use Smart balance light butter in these or is that 2 much fat? Thanks emmasmom ibs-c gas
Not Quite Mom's Chocolate Chip Cookies 1/4 c canned pumpkin 2 T earth balance vegan margarine 1/4 c sugar 1/2 c brown sugar 1/2 t vanilla Cream the ingredients. Add: 2 egg whites (3 T egg beaters) Blend. Add: 1 c + 2 T flour 1/2t baking soda 1/4t salt Blend in well. Stir in: 6 oz (3/4 c) dairy free chocolate chips.
Spoon rounded teaspoons (eating spoons, not measuring) onto ungreased cookie sheet. Bake at 350, 10-14 minutes.
Let rest on cookie sheet about 5 minutes, but remove to rack before fully cooled (otherwise, they stick).
