I'd try rice milk mixed with lemon juice or vinegar to make "buttermilk". Take at look at the Nothin To It Muffins to see how much milk to how much souring. The recipe calls for soy milk and vinegar but I've successfully used rice milk and lemon juice. I've also used just rice milk with no souring and the muffins were fine.
