Oatmeal Pancakes

I am so excited. Today was my first day of trying my favorite breakfast recipe with the IBS safe substitutions. It came out BETTER than before (I think its cuz my soy yogurt has sugar and my plain yogurt didn't haha).

Here is the recipe:

1 egg (sub: 2 egg whites)
1/2 cup of plain non fat yogurt (sub: plain soy yogurt)
2 tbsp. oil (I put maybe 1 1/2...I tried putting applesauce in this recipe once for half of the oil and I did not like it personally)
1 tsp. sugar
1 tsp. vanilla

*mix together all those ingredients well

then add:
1/2 cup of oatmeal
1/4 cup of white flour
1/2 tsp of baking powder
1/2 tsp. of cinnamon

*fold these ingredients together

I spoon these onto 2 pans on the stove. I usually make two smaller pancakes in one pan and one big one in another pan. I eat the two small ones, and put the other in the refrigerator for the next day. Serve with marble syrup or fruit syrup (I put strawberries, blueberries or apples on the stove to heat up for a few minutes- sometimes with some sugar) to make a fruit sauce for the pancakes.
