Irritable Bowel Syndrome Message Boards | Zucchini Parmesan Orzo & Orzo with veggies

Haven't tried these yet but it sounds good I found this like while searching the web. Let me know if any one trys these.

Zucchini Parmesan
Simple shrimp recipe. You can substitute w/chicken also.
8 ounces noodles (any kind of noodle pasta) 16 ounces shrimp 1 tablespoon light butter 1 cup mushroom 1/2 cup fresh spinach 1 garlic clove, minced 2 teaspoons pepper (I use garlic pepper) 1/2 cup almond milk 2 teaspoons cornstarch 1 tablespoon parsley
Boil water and cook pasta.
Use cooked frozen shrimp, thaw and remove tails.
Melt light butter in skillet and add minced garlic. Cook mushrooms and spinach. Then add shrimp and garlic pepper. Heat shrimp through.
Add most of milk, except save a few tablespoons Mix cornstarch remaining milk. Stir into shrimp and milk in skillet. Let thicken.
Drain pasta after cooked. Add shrimp mixture to pasta and add parsley.

Orzo with veggies

8 oz uncooked orzo pasta (or other small pasta) 1 cup vegetable broth 1 small zucchini, quartered lengthwise and sliced thinly 1 carrot, peeled and diced 1 large onion, diced 1 cup diced eggplant (peel first if desired) Cook orzo according to package directions. Bring vegetable broth to a boil in a medium saucepan, add vegetables and saute until done to your liking (5-10 mins). Drain orzo and add to vegetables. Keep cooking until it is at the temperature you like. Top with some cheese (opt)
