Double Apple Cake

I noticed this recipe on the back of my Safeway brand flour bag this morning and thought, this sounds PERFECT as an IBS-safe recipe! You don't even have to modify anything. I'm going to make it tomorrow:
2 1/2 cups flour 3 tsp baking powder 2 tsp cinnamon 1 1/2 cups sugar 1/4 tsp salt 1/2 cup egg substitute (or 4 egg whites) 3/4 cup applesauce 3 cups Granny Smith apples, peeled, cored, and chopped
Preheat oven to 375 F. Spray a 9 x 13" baking dish with cooking spray. In a large bowl, sift together all dry ingredients. Stir in eggs and applesauce. Stir in chopped apples. Transfer batter to prepared pan, bake for 25 minutes or until toothpick inserted in centre comes out clean. Serve warm or cool. Makes 16 servings.
It says cake can be refrigerated for several days or frozen.
