Lemon Herb Pasta Salad with Chicken

This is a recipe I adapted from a fatty, cheesy chicken dish and turned it into a nice, fresh, safe salad instead! I just had it for dinner tonight and it was so nice and refreshing - this would make a great summer meal!

- 1 chicken breast, cut into bite-sized cubes
- 1 clove garlic, minced
- 1/4 of a small onion, chopped
- salt and pepper to taste
- 2 cups uncooked spiral pasta
- 1/2 red pepper, chopped
- 1/4 cup low-fat mayo OR Miracle Whip (preferred)
- zest of 1 lemon
- 3/4 tsp Rosemary seasoning blend

Cook pasta according to package directions. Drain and rinse with cold water to cool. Meanwhile, cook chicken, garlic, onion, salt and pepper in a non-stick skillet sprayed with cooking oil. Allow to cool. Combine pasta, chicken, and all remaining ingredients in a bowl, mix well. Refrigerate until cold. If you can tolerate it, serve over a bed of baby spinach. Makes about 2 servings, and could easily be doubled. Enjoy!
