vegan fat free chocolate cake

You won't believe it either!
This is a modified version of a recipe in the vegetarian times cookbook. This can easily be doubled, or halved. Makes two small (8x8) layer cakes, or 12 cup cakes.
2 1/2 cups flour
2/3 cup coca powder
1 1/3 cup sugar
2 tsp baking soda
1/2 tsp salt
6 tbsp applesauce
2 1/4 cups plus 2 tbsp water
1 tsp vanilla extract
2 tbsp cider, white or rice vinegar
whisk dry ingredients, including sugar, together in large bowl. Mix wet ingredients together in separate bowl. Add wet ingredients to dry, stirring only until blended.
For cupcakes: preheat oven to 375, bake for 20-25 minutes
For cake: preheat to 350, bake for about 45 minutes.
when toothpick comes out clean, they are done.
1 1/3 cups cocoa powder
1 1/2 cups sugar (regular!)
2/3 cup cornstarch
2 cups milk substitute of choice
1/2 tsp vanilla extract
In medium saucepan, combine cocoa and sugar. In bowl, combine milk and cornstarch. Whisk cornstarch mixture into cocoa mixture. Cook over medium heat, stirring constantly and scraping bottom and sides of pan with rubber spatula, until mixture is glossy, about 7 minutes. Remove from heat and add vanilla. Beat to remove lumps. cool completely.
