Irritable Bowel Syndrome Message Boards | BEST Chocolate Cookies EVER!!!

I used to make these cookies a lot at home when I was a teenager. They are so good - they have a nice light cakey texture and a strong chocolate flavour - and they come from a low-fat cookbook so I didn't even need to adjust too much, although I still subbed half the butter for applesauce, and they still turned out fantastic (I just baked some this afternoon)! If you make 40-48 cookies, they contain less than 1.5 grams of fat each!

Cocoa Drop Cookies

- 4 tbs light dairy-free butter or margerine
- 4 tbs unsweetened applesauce
- 1/2 cup granulated sugar
- 1/2 cup soy sour cream mixed with enough water to equal 2/3 cup (soy sour cream is really thick, plus this helps to reduce the fat. If you can't find soy sour cream, I have actually used milk [just use soy] soured with vinegar to make this recipe and the cookies still turn out great!)
- 1 egg white
- 1 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 3 tbs cocoa
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp ground cinnamon

Preheat oven to 350 F. Cream butter, applesauce, and sugar together until fluffy. Add sour cream, egg white, and vanilla, beat until well blended. In a separate bowl, stir together all the dry ingredients. Add gradually to sugar mixture, switch to stirring with a wooden spoon when batter becomes too thick (the batter will be VERY thick and sticky, but this is okay). Drop dough by rounded teaspoonfuls onto cookie sheet sprayed with cooking spray (don't worry if they look a little small, they actually rise a little during baking). Bake 10-12 minutes or until a toothpick inserted in centre of one cookie comes out clean.
