I think this meal is great in winter and good enough for company. Spicy Coconut Soup with Spinach and Shrimp
Cooking spray 2/3 cup chopped onion 1/2 cup chopped red bell pepper 2 garlic cloves, minced 1 1/2 teaspoons red curry paste (or to taste- the Thai kitchen brand is super hot and 1.5t will burn for normal taste buds. Other brands are not so hot and need more)Available at grocery stores. 1 minced serrano pepper 2 (14-ounce) cans fat-free, less-sodium chicken broth 1 (14-ounce) can light coconut milk 1 pound medium shrimp, peeled and deveined (I would use about 1.5 pounds little bit smaller shrimp. It makes it easier to eat. Can be precooked or raw.) 6 cups torn spinach
Heat a medium saucepan over medium-high heat. Coat pan with cooking spray. Add onion and saute 3 minutes, add pepper, garlic, and paste and saute 3 more minutes. Add broth and coconut milk; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally; it will thicken some. Add shrimp; cook 4 minutes or until shrimp are done. Stir in spinach; cook 2 minutes or until spinach wilts. Serve with: Thai fish sauce lime wedges chopped cilantro

Tamara's Asian Bruschetta 1 loaf baguette sliced diagonally 1c or little less dried chinese mushrooms (these are pretty cheap) 1package shiitake, stems removed finely chopped 1/2 red pepper finely chopped 1/2yellow pepper finely chopped 1c finely chopped scallions 2 cloves finely minced garlic 3T soy sauce 3T mirin (chinese sweet rice wine available at most supermarkets) 1T rice vinegar 3T mushroom soaking liquid (see below) Pour boiling water over dried mushrooms and let soak about 15 minutes. Drain but save liquid and finely chop mushroom caps. In a small pan with cooking spray add mushrooms and saute 4 minutes, add remaining ingredients and saute until cooked and well mixed. Meanwhile spray olive oil Pam on baguettes and toast in the oven. Serve the topping on the baguette slices. It is slightly sloppy but super tasty!
