Homemade Hummus

This is right out of a low-fat cookbook, so you shouldn't have to adjust the oil content!

1 15oz can chickpeas, drained and rinsed
1/4 cup of water
1 tbs plus 1 tsp of lemon juice
1 tbs of olive or canola oil
1/4 tsp ground cumin
1 clove garlic, minced or finely chopped
salt and pepper to taste

Place all ingredients in a blender or food processor and puree until smooth (you MAY need to add a little extra water). Cover and refrigerate at least 2 hours or until chilled (I find it tastes better the next day). Makes about 2 cups.

I love to have two or three tablespoons or so of this stuffed into a pita with tomatoes. Mmmm!
