Terri's dry but seriously delicious and almost instant steel cut oatmeal

I don't really like cooked oatmeal the way they tell you to fix it. I can't stand the yucky texture. However, steel cut oatmeal is so good for you that I wanted to find a solution that worked for me where I could actually eat it.

I only do this about once a week and I have my own "instant" breakfast every day. I bring 1 2/3+ cups of water to a boil and add just a dash of salt in a heavy saucepan. The water needs to be just a bit over 1 & 2/3 cups and not quite 1 and 3/4 cups. I add one cup of steel cut oats to boiling water. (Quaker is fine and much cheaper than the Irish oats). Stir it and cover it and maybe let it boil for about 10 seconds but turn the heat down. Then turn it off. Let it sit either overnight or for several hours covered. After it's cool scoop it into a container that you will keep covered in the frig.

At this point I stir in some sugar--about a tablespoon or more as you figure out how you like it--and some cinnamon to taste (I probably use about a teaspoon, 2 tablespoons of ground walnuts or ground almonds and mix well. You can also add in a tablespoon of Acacia fiber too if you wish. I keep this in a covered bowl in my frig and I have an almost instant but very healthy breakfast for the entire week.

Just put about 1/2 cup into a covered bowl and heat in microwave or toaster oven. I don't add milk to this as I can't stand soggy cereal and I can't digest milk anyway. It looks sort of like brown rice but is far more tasty in my opinion. If it seems too dry to you just add a bit of water before you heat it. It's very soothing.

This stays with me nearly all morning and though it's not really instant by preparing it ahead of time and keeping it in the frig it's a really fast meal for me. I don't have much time to fix breakfast in the morning and it's the one meal that I don't mind eating the same thing most every day.

For those of you who generally hate cooked cereals it might be a pleasant surprise.
