Hi -- maybe this is something everyone already knows, but at my suggestion my husband and kids made a very-low-fat cake for my birthday (ever since my gall bladder was removed I can't tolerate any fat) and it came out GREAT.

They used a Betty Crocker Super Moist cake mix in Devil's Food. They completely substituted apple sauce for the oil and egg beaters for the eggs. Obviously they didn't use frosting but topped it with marshmallow fluff! They box claims 1/12 cake has 3.5 g of fat -- we don't eat pieces that big anyway, so this was totally digestible to me. If you have other food issues, check the ingredients list -- I have lactose intolerance, too, but if there was any dairy in the mix it wasn't enough to bother me.

It came out a little denser than your typical boxed cake mix -- more like a homemade cake. I haven't had a birthday cake in years, so this was a real treat!
