Great way to make tofu - easy and quick!

I recently discovered an elaborate stir fry recipe calling for glazed tofu. The stir fry was delicious, but it was the tofu that really got my tastebuds watering. I decided to try the tofu alone on rice and it was delicious! This is super simple, quick and tastes fantastic on rice or noodles.

Glaze:
2 Tbsp. soy sauce
2 Tbsp. sugar or honey
1/4 c. vegetable or chicken broth

Mix the glaze in a small bowl and set aside.

Cut one block of extra firm tofu into 24 triangles. Start by halving the block horizontally. Then cut each half into three equal strips. Cut the strips in half, leaving you with 12 cubes. Cut each cube diagonally. You end up with 24 triangles.

Pour about 1/3 c. cornstarch into a pie dish and coat the tofu triangles with cornstarch.

Heat about 3 Tbsp. canola oil in a skillet until very hot. Put the tofu in the skillet and cook on one side for 4-5 minutes, or until golden brown. Flip the tofu and cook on the other side 4-5 minutes, or until golden brown.

Add the glaze and cook until glaze thickens, about 4 minutes. Be sure to toss tofu in glaze while you're cooking.

Remove from heat and pour over rice or noodles or eat plain!
