I recently made Heather's Sweet Cinnamon Zucchini bread from the EFI book except a chocolate. I simply substituted 1/2 cup flour for 1/2 cup unsweetened cocoa powder. It's pretty darn good! I undercooked it a tiny bit to have it be more moist and gooey in the middle. It's great warmed up with a bit of Earth Balance vegan spread on it.
I've also been experimenting with different flours. I used spelt flour once, and it was exactly the same. For a GF version of both this bread and the pumpkin apple spice bread, I used a GF flour mix from my health food store (made from rice flour and xanthan gum I think).
