Something that I have done a few times as I'm an impatient person. I have made banana bread after buying my banana's the day before.. the secret is.. Freezing them. If you freeze them, then they soften up nicely once thawed.. To thaw them out, run them under some luke warm/cool water in the sink (or let them soak) Makes them much easier for mashing.
