I made an absolutely wonderful "Breakfast Scramble" for lunch today. Think it may fit the criteria. It is from the "15 Minute Vegetarian" by Geiskopf-Hadler. As follows: 1TBs olive oil, 2 medium red potatoes, finely diced., 1/2 med onion, finely diced, 2 tsp chili powder, 1 tsp oregano, 1 tsp ground cumin, 12 oz firm tofu crumbled, 1/2 tsp salt, 6 oz baby spinach. Heat oil in heavy bottomed fry pan, saute potatoes, onion and spices for 3 min, stirring freq. Add tofu and salt, stir and then add 1/2 c. water, immed cover pan and cook for5 min. Mound spinach on top cover again and cook about 2 min til it wilts. If too much watery liq in pan, cook uncovered a few min longer. YUM!  It also called for 2 tbs pickled jalapeno pepper...my tummy doesn't like them so I left out!
