Banana Snack Cake

I found this recipe on allrecipes.com. I altered it a lot so I will just post what I did to it. My parents LOVED this and they eat a "normal" diet. Very good and travels well.

Banana snack cake

1 cup white sugar
4 TBSP margarine + 3/4 cup applesauce
enough egg beaters for 2 eggs
1/2 cup soy milk with one TBSP vinegar added
1 cup mashed banana (about two large)
1 tsp vanilla extract
2 cups all-purpose flour
1 cup quick cooking oats
1 1/2 tsp baking soda
1 tsp salt
1/3 cup flaked coconut- I used a little less
3/4 cup semisweet chocolate chips (I like tropical source)

1) Preheat oven to 350. Spray a 9x13 inch pan with cooking spray. Add vinegar to soymilk and let sour. In medium bowl mix flour, oats, baking soda and salt. Set aside.

2) In large bowl cream margarine and sugar. Add eggbeaters and applesauce mix throughly. Mix in soy milk + vinegar combo, bananas and vanilla. Add flour mixture and combine. Finally fold in coconut and chocolate chips.

3) Pour batter into a 9x13 inch pan. Bake at 350 for 30 to 35 minutes or untill a toothpick comes out clean. I checked mine after about 25 minutes.

I have also used less margarine in this recipe. I went as low as 2 TBSP with 3/4 cup + 2 TBSP applesauce added. It turned out just as well.
