Incredible Basil Chicken Marinade

This is an Everyday Italian recipe. Giada De Laurentiis made this as a vinaigrette dressing for a pasta salad. I didn't like it as a dressing but Joe suggested we try using it as a marinade for chicken and it is fabulous.
Generously salt and pepper boneless skinless chicken breasts and then marinate in enough of the vinaigrette to cover. After marinating for a couple of hours, grill until done, about 7-8 minutes per side.
This vinaigrette has a *lot* of oil in it. I do fine with it as a marinade but if you think the oil will be too much try replacing some of the oil with chicken broth.
We can marinate about 6 breast halves in this amount of vinaigrette. It keeps well in the refrigerator.
Red Wine Vinaigrette

1 bunch fresh basil, stemmed and leaves chopped (about 2 cups)
1/4 cup red wine vinegar
1 clove garlic
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
In a blender, add the basil, vinegar, garlic, mustard, salt and pepper. Blend until the herbs are finely chopped. With the machine running, drizzle in the olive oil until the dressing is smooth.
