One of the things i love to make (even before i found this site) was Risotto with spinach and mushrooms. I make it with a special kind of mushrooms, translated its chestnutmushrooms. They look like normal mushrooms but are brown and have more taste in my opinion.

Here is the recipe for 2-3 servings. Measures are in european style but maybe someone can recalculate them?

Ingredients:
250g chestnutmushrooms
150g frozen spinach
200g risotto
600ml veggie stock
herbs (if you like)

put a little bit of oil in a pan, if hot, put the risotto in and stir for 3 min. The grains will be not see through anymore. Pour about half of stock in, put fire down so it simmers, if stock is almost gone, put a bit extra in there. After 20min approxiately its done (taste it to make sure). While its cooking, put the frozen spinach on and defrost it. Cut the mushrooms into pieces. When risotto is done put spinach and mushrooms in, season if you want and voila its done.

I hope my recipe is understandable. Ask questions if you like
