My grandma always salted it and soaked it even if it was just picked from our garden, so I just assumed it was still bitter...
I'm from Bulgaria and Macedonia (that' between Romania and Greece & Turkey, and between Serbia and the Black Sea).
I have a lot of traditional recipes in my recipe folder, but I have a hard time with the spices. I usually bring them from home and sometimes I can find their latin names and track them to their english names... Anyway, I am just afraid they would taste too weird to you guys if I post them. When we have people over, I always put much less spices than I would put if we were alone, just because I don't want to shock people...
About the recipe, I just find the combination of red peppers and eggplant very yummy
