Creamy Italian Style Risotto

A recipe my Italian Mother-in-Law made frequently, it's delicious and good for most IBS'ers(I made some changes from the way she made it: Takes a little time to prepare, the kitchen smells so good too. Fennel and pepermint help many of us, I have several side dish recipes I use it in. My husband eats Fennel raw all of the time, an Italian thing!
2 tbls Canola Oil,(I use Light Olive Oil; 1/2 cp trimmed and diced Fennel Bulb; 1 Shallot diced; 2 Garlic cloves minced; (1 tsp Onion powder; 1 tspn Garlic powder can be used instead) 1 tbs Fresh Mint(can use dried flakes); 1 tbs chopped fresh Italian parsley(or 1/2tsp regular dried; 1 tsp crushed dried Rosemary; 1 tsp lemon zest; 1/4 tsp ground Coriander; 3/4 cp uncooked Arborio Rice; 1/4 cp white wine; 2 cups Chicken broth;salt/pepper to taste; 3/4 tbs lemon juice.
Heat oil in medium heavy pan on medium heat, add fennel bulb(fresh onion & garlic also if used)saute till Fennel is slightly soft-2-3 minutes. Stir in all herbs and rice until all rice is oil coated-3 minutes. Pour in Wine and Broth, add Garlic and Onion powders if used, bring to boil, turn down to low/medium heat. Simmer 20 to 25 minutes until almost all liquid is absorbed and rice is tender, stir several times during simmering. When done, remove from heat add salt, pepper, an extra large pinch of mint, parsley, rosemary, plus the lemon juice and zest. Cover let stand about for a few minutes before serving. Parmesan cheese may be sprinkled on it if you can tolerate it. It is one of my husband' favorite side dishes and with my adapations I can eat it during IBS flare-ups.
