Mexican Chicken Quesadillas!

We've been eating chicken quesadillas lately. They are VERY fast (like 10 minutes) to make and they're delicious! This is also a great, easy lunch when you're in a hurry. I cook these on my George Foreman grill, but you could use a non-stick skillet if you don't have one.

NOTE: I buy Tyson's (pre-cooked) Grilled Chicken Breast Strips from Sam's because they taste good and cook in 2 minutes in the microwave! It's easy to have the bag of chicken in the freezer to grab when you need some. Comes in handy for other meals, too.

Ingredients: chicken breasts, chicken broth, seasoning (salt, cooked chicken, soy sauce, chicken broth, maltodextrin, garlic powder, onion powder, natural flavors), salt, natural flavor.

Of course, if you prefer to use fresh chicken, you can just cook it and cut it into pieces for your quesadilla. The recipe below, though, assumes you're using frozen, pre-cooked, grilled chicken strips.


Mexican Chicken Quesadillas
serves 1

  • 2 flour tortillas (I use Mission brand fajita size tortillas because they're small enough to fit on my George Foreman, but you could use the bigger burrito size tortillas and just use one folded in half)

  • Frozen, pre-cooked, grilled chicken breast strips (enough to cover 2/3 of your tortilla)

  • Shredded cheese (You can use soy cheese or whatever you like. I use a tiny bit of Kraft fat-free cheddar, but you may or may not be able to tolerate that.)

  • Mexican seasoning (Use something with no dairy or MSG. I used a small sprinkling of this taco seasoning recipe )


Place frozen, pre-cooked chicken strips in a single layer on microwave safe plate. Sprinkle with Mexican seasoning, to taste. Cover lightly with plastic wrap and cook on high approx 2 minutes or until hot. Don't overcook!

Preheat George Foreman grill (or non-stick skillet). Place tortilla on grill/skillet. Place heated chicken in center of tortilla, careful not to go too close to the edge. Sprinkle on your cheese. Put on second tortilla and close grill. Let cook for a minute or two and flip. Cook another minute or two until tortilla is nice and golden. Cut into triangles with a pizza cutter. Serve with rice, baked tortilla chips, and salsa (I use Amy's mild salsa). Enjoy!

If you don't want to use the taco seasoning, it is still perfectly yummy without it. Next time I may try serving this with a Mexican rice to jazz it up a bit more.
