I got this recipe out of my mam's weight watchers book and they are totally yummy. I don't particularly like cranberries so I changed them to fresh cherries but you could use anything I guess - next on the list to try for me are lemon, raspberry and blueberry ( separatley not together by the way lol)

300g plain flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
150g light muscovado sugar (I didn't have this in so just used refined white sugar)
50g of dried cranberries (I just cut up some fresh cherries and added what looked like a good amount lol sorry not more accurate , just depends how fruity you like your muffins)
2 egg whites
225ml rice milk or soy
50ml sunflower oil (I used olive oil and also used just about half that amount I think)
I added a drop of vanilla extract

line a 12 muffin tray with cases. Preheat the oven to gas mark 6/200C/ 400F

sift the flour , baking powder, cinnamon in a mixing bowl, stir in the sugar and chosen fruit.

beat together egg whites, milk, vanilla extract and oil and add to dry ingrediants. mix well

spoon the mix into the muffin cases and bake for 15-20 mins. leave to cool a while.

enjoy- 200 calories per serving but doesn't give the fat grams unfortunatley but they are sooo yummy
