Rice Flour Baking

Hello everyone,

Since having cut wheat out of my diet, I have been doing a lot of experimenting baking with rice flour (or rice flour blends with xantham gum). I know that I will not get the same results and with wheat flour, and most of the stuff I used to make was fairly successful. However, I am finding that no matter how long I keep something in the oven, it doesn't ever really complete baking. Has anyone else ever encountered this problem? any suggestions? thanks!
