I don't think you can do much about this -- it's the low-fat sog curse. I always store my low-fat bread products in the fridge and that helps a little. I also wouldn't store them in an air-tight container, that just seems to make it worse. I also freeze anything that I'm not going to eat within the next 24 hours since low-fat stuff spoils so quickly.

Or you could just only make muffins with some kind of topping (like the crumbly topping from Heather's pumpkin spice bread) and then you'll never know about the stickiness that lies beneath.
