I got this recipe from my local HFS. I haven't tried it yet, but I thought it might look good for those of you who eat quinoa.
Quinoa Almond Mango Salad
1 1/3 cup quinoa, rinsed thoroughly 2 large mangoes 1 jalapeño, peeled and diced 3 scallions (or green onions), thinly sliced Curry Vinaigrette (recipe below) 1/3 cup roasted almonds sea salt
Bring 3 cups water to boil in a saucepan. Add 1/4 tsp. salt and quinoa. Lower the heat and simmer until quinoa is tender, approximately 12-15 minutes. Drain and set aside. Peel and cut mangoes into bite sized cubes. Toss the quinoa with mangoes, peppers, Curry Vinaigrette, green onions. Chop the almonds and add them last so they retain their crispness.
Curry Vinaigrette 1 clove garlic, finely chopped 1/4 tsp. sea salt, ground in mortar or garlic press until smooth 2 Tbs. yogurt, mayonaise or sour cream (Use dairy-free, LF versions.) 2 tsp. curry powder 1 1/2 Tbsp. fresh lemon juice 5 Tbs. olive oil or sunflower seed oil (I would probably use a lot less than this, or even leave out the oil.) 2 Tbs. finely chopped cilantro
Combine garlic, salt, yogurt and curry in a small bowl. Stir in lemon juice, then whisk in oil. Let stand for 15 minutes. Stir in cilantro. Taste for salt and tartness, adjust as needed.
