Oven-Fried Onion Rings

The talk about that Green Bean Casserole as a Thanksgiving side dish jogged a dim memory so I went digging through the recipes I'd gotten from my aunt and I found one for Oven-Fried Onion Rings. I haven't tried it - I'm not a big onion ring fan - but as long as you can tolerate cooked onions it looks like it should be safe. With these and one of the cream soup substitutes from the Boards, I bet you could make that casserole with no trouble.

Oven-Fried Onion Rings
From the Mobile Press Register via Aunt M

1 medium (8-10 oz) onion (recipe calls for Idaho-Oregon Sweet Spanish onions)
1 Tbsp vegetable oil
2 Tbsp cornmeal
2 Tbsp dry bread crumbs
1/8 tsp paprika

Peel and cut 1 medium onion into 1/4-inch slices. Toss with 1 Tbsp vegetable oil. Mix together 2 Tbsp each cornmeal and dry bread crumbs and 1/8 tsp paprika. Sprinkle over onions, tossing to coat evenly. Place rings on baking sheet and bake at 400 degrees for 20 minutes or until lightly browned. Sprinkle with salt or salt substitute. Makes 4 servings.
