Single-serving Microwave Brownies
      11/07/06 05:13 PM

I got this from someone who got it "off the Internet", so I have no idea of the source. They definitely hit the spot for a quick easy chocolate fix, especially if you're afraid to make a whole pan of brownies because you know you'll just eat them all yourself.

I'm assuming that you can also make up a large batch of the dry ingredients and then just scoop 1/4 C out when you're ready to make it, but I haven't tried it.

2 T sugar
1 T cocoa powder
1 T reduced-fat Bisquick
1 T EggBeaters
1 t water

Mix together first three ingredients in small microwave-safe bowl. Add EggBeaters and water and mix well. Microwave on high for one minute or until cooked. (Be careful -- if you overcook it then it turns into an unappetizing spongey thing.)
