IBS safe turkey gravy / and ? about pre-cooking mashed potatoes

Hi -- Thank you for the mashed potato recipe - that sounds perfect ! I never knew about using broth in them.

i still would love an answer about if people have good luck with cooking mashed potatoes ahead of time and heating them up again? I am obsessed with doing as few last minute things as possible, but concerned that the potatoes won't be as good that way. Anyone know about this?

Here is the turkey gravy recipe - I am cooking it right now - my 1st time - but i have a friend who has used it for years -- she is not IBS, but also obsessed with having less last minute items -- and it occurred to me how much less fat this has in it and still lots of turkey flavor.

Way ahead of time (at least a day before turkey day) --

Roast at 350 - 4 lbs turkey parts (i used wings and thighs)
put also in roaster pan, about 2 carrots, 2 celery and 2 onions. They can be whole, the onions cut in half or quartered.

Roast for about 3 hours. The turkey should be nicely browned - check the roaster pan from time to time - it should have juice in it and get a bit brown, but be sure it doesn't get very very dark and burn. When it gets dried out, or very brown, add about 1 cup of water.

Then put all the veges and turkey parts into a big pot. Pour some fat free chicken broth into the roaster pan and stir to get up all the brown glaze. Add about 6 cups of chicken broth to the pot and simmer very low for 1 1/2 hours.

Strain all the veges and turkey parts out and put the broth in the frig. The next day you can take the fat off. If you have more than a couple days before you will use it -- freeze it.

About an hour before people are coming, thicken the broth with cornstarch (I don't really know amounts here) Dissolve about 2 tablespoons cornstarch completely in cold water.(cold water dissolving is essential) Add to warm broth (stir in quickly and thoroughly with a whisk if possible) and boil for a few minutes. If it is not thick enough, add more. Keep warm on a very low heat or in a crock pot.
