Any of the vegetables on the Soluble Fiber Foods list can be eaten safely. Don't forget about veggies like sweet potatoes and butternut squash. Try MCV's Twice Baked Sweet Potatoes for a wonderful soluble fiber veggie dish.

If you're IBS-D, you should also eat IF vegetables for health and if you're IBS-C you must get some IF vegetables to keep things moving. The only way to know which ones you can handle is to try them. Do so cautiously: make sure you have a soluble fiber base and chop, puree, cook - whatever it takes to make them okay for you - and try just a little bit at first. Some IF vegetables may be more troublesome than others. You can read this to learn about them and maybe try some of the simpler ones first.
