This recipe is from the book that came out before "La Dolce Vegan!", called "The Garden of Vegan". The recipe is actually called "Matthew's Delicious Tofu" in the book.
Serves 2-4; serve as a main course with a vegetable or rice side dish.
1 lb firm tofu, chopped into small cubes 2 T olive oil 3 cloves garlic, minced 1 T fresh ginger, grated 1 t Asian chili sauce 1/8 cup maple syrup 1/8 cup Braggs (I used tamari soy sauce) 1 t lemon juice 1/4 cup oven roasted almonds, chopped, (garnish)
Almonds: Bake in oven on a baking sheet at 350 degrees for 10 minutes
Tofu: In a medium saucepan on medium-high heat, saute the tofu in oil until browned. Reduce heat to medium-low and add the garlic, ginger, and chili sauce. Saute for 5 minutes. Add the maple syrup, Braggs/tamari, and lemon juice. Cover and cook until the liquid has evaporated. Garnish with almonds.
