Sweet & Spicy Tofu

This recipe is from the book that came out before "La Dolce Vegan!", called "The Garden of Vegan". The recipe is actually called "Matthew's Delicious Tofu" in the book.

Serves 2-4; serve as a main course with a vegetable or rice side dish.

1 lb firm tofu, chopped into small cubes
2 T olive oil
3 cloves garlic, minced
1 T fresh ginger, grated
1 t Asian chili sauce
1/8 cup maple syrup
1/8 cup Braggs (I used tamari soy sauce)
1 t lemon juice
1/4 cup oven roasted almonds, chopped, (garnish)

Almonds: Bake in oven on a baking sheet at 350 degrees for 10 minutes

Tofu:
In a medium saucepan on medium-high heat, saute the tofu in oil until browned. Reduce heat to medium-low and add the garlic, ginger, and chili sauce. Saute for 5 minutes. Add the maple syrup, Braggs/tamari, and lemon juice. Cover and cook until the liquid has evaporated. Garnish with almonds.
