have you tried quorn bolognaise? I find that really good for freezing.
Basically it's just spag bol with quorn mince instead of beef mince.
You cook some carrots, onions, mushrooms in a little olive oil until they're soft. Add a tin of chopped tomatoes and a tin of tomatoe puree with garlic and herbs then add the quorn mince which takes about 15 minutes to cook in with the veggies. Freeze it in portions and then just defrost, warm up and cook some pasta to go with it.
Also,
butternut squash and lentil soup. This is soooooo yummy I really love it.
one butternut squash- size depends on how much you are making
1 sticks of celery
1 small onion
1 cup of red lentils
1 carrot
2 litres chicken stock
rosemary or any other herbs you feel like adding - I just love rosemary. Just add however much you like depending on taste- think I use like a teaspoon or two.

Heat some olive oil in a pan and cook butternut squash for a couple of mins add onion cook a bit more til it's soft.

Add carrot and celery, cook for further 5 mins. Add lentils stir.
pour in the stick and herbs and bring to the boil then cover, cooking over a moderate heat for about 1 hour.

I then puree it which makes the lentils easier for me to take and also it makes it lovely and creamy textured.
salt and pepper to taste.
eat with lots of crunchy french bread

sorry my amounts aren't very exact but I think it all depends on taste and how much you want to make etc. Hope it all goes well in time for baba
