I'm vegan and I find that it works really well with the IBS diet, since we already don't eat dairy or red meat. Most of Heather's book isn't vegan, but I've enjoyed making a few things, like the garden veggie lo mein and the peppermint fudge cake.

Also most vegan recipes you find in cookbooks or online are suitable or can be adjusted. Here are some suggestions:
Use white flour if it calls for whole wheat flour.
In baking, replace 2/3 of the oil or margarine with applesauce.
If you need to fry something, use a non stick pan so you can use as little oil as possible.
If you can find it, use low fat tofu.
Seitan/wheat gluten can be used instead of chicken in many of Heather's recipes.
