Sweet and Tangy Fish (or Shrimp)

This is my husband's modification of a recipe on the back of a Frontera salsa bottle. It's low-fat and really tasty!

1 teaspoon olive oil
3/4 cup salsa of your choice
2 teaspoons cider vinegar
1 1/2 teaspoons honey (or more to taste)
1/4 teaspoon salt
1/2 lb tilapia or other firm fish, or peeled and deveined shrimp

If using fish, cut into bite-size pieces.

Heat the olive oil in a non-stick skillet over medium heat. Add the salsa and cook for 3 minutes. Add the vinegar, honey, and salt and stir. Add the fish/shrimp and stir over heat for 3 more minutes, or until it's cooked. Serve with rice or tortillas - you'll want something to sop up the sauce.

This is 2 servings, but can be easily doubled if you use a large skillet. I'll bet you could use other proteins too....
