Amaranth Date Bread (from Arrowhead Mills)

If you can tolerate nuts and dates, this is pretty good. Amaranth is higher in calcium than spinach, and higher in fiber than white rice, but it's still mild. I also plan to try making this with amaranth flour instead of white flour.

Amaranth Date Bread

1 c chopped dates
1/2 c amaranth
1 c boiling water
3 egg whites
1/2 c honey
¼ c canola oil
2 c flour
2 tsp baking powder
1 c chopped pecans
1 ts Vanilla extract

Soak dates and amaranth in boiling water for 10 mins; drain if necessary.

Meanwhile, in a separate bowl, beat whites; add honey and oil; beat well. Stir in all remaining ingredients, including dates and amaranth, mixing well. Pour into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min.
