I know that if it's undercooked, it could sink in the middle during cooling, but that doesn't sound like what you're asking. Are you saying they sink while they are baking?

Do you live in high-altitude?

The only other thing I can think of is something to do with the flour - I know there can be a connection, buy my memory is failing me here....I'll post if I remember
