Couscous with raisins

I'd forgotten about this recipe until my BF reminded me & I made it last night as a side dish for chicken breasts. It's a Rachael Ray recipe, but it's not on the Food Network site. It's so good! The raisins provide just the right touch of sweetness!

1 1/2 cups chicken broth/stock
1 tb butter (I used an IBS-safe substitute)
1/4 cup golden raisins, chopped
1 1/2 cups couscous

Heat chicken stock & butter in medium pot with a tight-fitting lid. When the liquid boils, add the raisins and couscous. Take the pan off the heat. Stir couscous & place lid on the pot. Let stand while you finish cooking the main dish. Fluff with a fork before serving. Serves 4.
