I had what I knew was going to be a REALLY good tomato. Homegrown. Perfect. So I made Panzella. Heather has a recipe in her book. My bread was rock hard stale artisan organic bread that was leftover from a loaf I bought the other day, so I made it like the old timers and plunged the bread in ice water for a few minutes and squeezed the water out. Then you crumble it and set aside while you mix the other ingredients. I didn't use garlic as her recipe calls for because this was such a ripe tomato (with a store bought one, I would go ahead and add the garlic as those lack flavor). Yummmmmmm. If you haven't tried the recipe do. Panzella is a great easy summer dish with a great SF base. If you have really rock hard stale bread, don't toss it! Make panzella. Always use fresh basil. If you have home grown tomatos, skip the garlic and let the tomatos speak.
