Tuna pot pie

Tuna Pot Pie

chicken bouillon cubes to equal 2 C prepared broth
approx 1-1 1/2 C hot water
1/4 t dill
1/4 t pepper
1/4 t salt
1 T lemon juice
1 T cornstarch
1/3 C cold water
1 6 oz can tuna, drained
2-3 C mixed vegetables (canned or frozen)
1 package wonton skins (48-count)
non-stick spray

Preheat oven to 375.

In a small saucepan, add bouillon cubes and water -- heat on medium until cubes are dissolved. Add dill, pepper, salt, and mix well. Put cornstarch into a small cup, add the cold water, and mix briskly until cornstarch is dissolved. Add slowly to saucepan, stirring as you do so, until mixture is incorporated. Let sauce thicken (you may need to turn up heat).

While you're waiting for some thickening action, take a 9" pie plate and spray well with cooking spray. Take the package of wonton skins and divide them in half. Use half to line the bottom of the pie plate.

Back to the saucepan -- is it thickened yet? If not, turn up the heat. If so, add the lemon juice and the tuna and mix well. If it seems too thick and you can primarily see only tuna, you'll need to add more hot water.

Arrange the vegetables at the bottom of the pie plate. Pour the sauce/tuna on top -- there should be enough to spread a layer on top of the veggies.

Use the remainder of the wonton skins to create a top crust. (You won't need to use all remaining 24.) Spray around the edges with non-stick spray. You can also lightly spray the top with non-stick spray. Or brush an egg white across the top. Use a sharp knife to make several slashes in the top.

Bake 25-35 minutes or until won-ton skins are browned and interior is hot. You'll need a longer cooking time if you use frozen veggies.

Note: I only used the won-ton skins as a crust because I needed to get rid of them, but for a fat-free crust they actually worked pretty well. The only problem I had was using too many on the sides poking up at the top so that they got a little too hard and crispy, but I just snapped those off. It was also a little more difficult to cut with just a fork, but I think civilized people are supposed to be using knives anyway.
