This is one of my favorite holiday pies. I've never baked it with the egg whites and soy butter substitutions, but I'm going to try this Thanksgiving! I'm wondering if the cranberries will be ok on the tummy because they are cooked (but not mashed).

2 cups raw whole cranberries
1/2 cup sugar
1/2 cup chopped walnuts (I guess we can put the nuts in the food processor)
1 cup sugar
3/4 cup melted butter
1 cup flour
1 tsp. almond extract
2 eggs, beaten

Oven 375 degrees. Grease a 10" pie pan. (Is crisco ok?) Place cranberries, nuts and 1/2 cup sugar in the bottom of pie plate.
Make a batter of 1 cup sugar, butter, flour, eggs and extract. Pour the batter over the cranberries. Bake 35-40 minutes. If using a clear pyrex pie dish, the oven can be lowered to 350 degrees.
