Just made this pizza for dinner and it turned out really well, when I didn't think it would, so I thought I would share.
Pizza base (I used a thin crust - if you are very sensitive to dairy, watch out for cheese and milk ingredients in store bought bases)
Plain tomato and herb pizza sauce
1 package of ground chicken breast, extra lean
1/2 of a white onion, chopped into small pieces
1 clove of garlic, minced
Mushrooms, as many as will cover in one layer the base of the pizza, sliced.
Soy mozarella cheese, grated
Seasoning of choice, I used the "Keg" seasoning salt
In a nonstick pan, cook ground chicken with onions and garlic. Once cooked, set aside.
Coat pizza base in sauce, then cover with the ground chicken. Add one layer of sliced mushrooms. Cover with soy cheese.
Bake in the oven at 375 degrees for 15-20 minutes, or until cheese is bubbly and edges are crispy and light brown.
** I was wanting to try this with ground turkey, but the TWO grocery stores I went to didn't have any so I reluctantly bought ground chicken as I already had all the other ingredients. I was worried the ground chicken would be dry and a bit flavourless, which is why I cooked it with the onions and garlic and the seasoning and it was YUMMMMMY!!
Very good, I would def make this again.
