I recently began experimenting with making french toast. I eat a bowl of oatmeal every morning but I wanted to have something special on Saturday mornings. Heather has a french toast recipe in her book but it requires a little prep work the night before. Of course, I am too disorganized to remember so I started experimenting.
Pam's French Toast
half a loaf of day old french bread, cut into 1/2 slices 4 egg whites 1/4 to 1/2 cup of soy milk 1/2 t. vanilla extract cinnamin or pumpkin pie seasoning 1 T. canola oil
Heat up skillet and spread oil evenly over it. Whisk together the egg whites, extract, cinnamin and soy milk. Generously coat bread in egg mixture and cook several minutes on each side until golden brown. Drain bread on papertowels. (I drain as a precaution but because I am using so little oil I don't really see much oil on the papertowel) Top with a little preserves or powered sugar. Yum.
