Depending on the recipe, you can probably use soy milk/ rice milk just fine. Or Silk makes a creamer type thing for use in coffee and such that I've used before in recipes.

If it's a particularly delicate recipe, where you have to whip it into peaks or something, you might not have as much luck. I think Rich's makes some sort of non-dairy creamer that some people have had more success with, but it's hard to find.

In most things, some sort of soy milk / soy milk creamer should probably do just fine.
